Vegan French Toast Recipe

Ingredients:

  • 1 cup chickpea flour
  • 1 tablespoon nutritional yeast
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup unsweetened almond milk
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut oil (for cooking)
  • Fresh fruit, for serving (optional)

Instructions:

  1. In a mixing bowl, combine the chickpea flour, nutritional yeast, cinnamon, and nutmeg.
  2. Slowly pour in the almond milk while whisking continuously to avoid lumps.
  3. Add the maple syrup and vanilla extract to the batter, and whisk until smooth and well combined.
  4. Heat a non-stick skillet or griddle over medium heat and add the coconut oil.
  5. Pour a portion of the batter onto the skillet, forming a round shape similar to traditional French toast.
  6. Cook for 3-4 minutes on each side, or until golden brown and cooked through.
  7. Repeat with the remaining batter, adding more coconut oil to the skillet as needed.
  8. Serve the vegan French toast warm, optionally with fresh fruit on top.
