Vegan Chickpea Pot Pie Noodle Skillet

Ingredients:

  • 8 oz (about half a box) of dry whole wheat or gluten-free noodles
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • 4 cups vegetable broth
  • 1/4 cup all-purpose flour or gluten-free flour
  • Salt and pepper to taste

Instructions:

  1. Cook Noodles:
    • Cook the noodles according to the package instructions until al dente. Drain and set aside.
  2. Prepare Skillet:
    • In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until fragrant and translucent, about 2-3 minutes.
  3. Add Vegetables and Chickpeas:

    • Sprinkle the flour over the vegetable mixture in the skillet, and stir to coat evenly. Cook for 1-2 minutes to lightly toast the flour. Gradually pour in the vegetable broth, stirring constantly, until the sauce thickens and coats the back of a spoon.
  6. Add Noodles:
    • Once the sauce has thickened, add the cooked noodles to the skillet. Stir gently to combine, making sure the noodles are coated in the sauce.
  7. Serve:
