This tuna and tomato cake is a great snack for a keto and low carb diet. It is easy to make, delicious, and satisfying. It is made with cream cheese, tuna, mayonnaise, cherry tomatoes, lettuce, and low carb bread. You can decorate it with arugula, cherry tomatoes, and olive oil for extra flavor and color.

Ingredients:

  • 250 g of cream cheese
  • 200 g of drained tuna
  • 2 tablespoons of mayonnaise
  • Salt to taste
  • Cherry tomatoes
  • Lettuce
  • 3 slices of low carb bread (you can use store-bought or make your own with almond flour, eggs, baking powder, butter, and salt)
  • Arugula

Instructions:


  1. In a medium bowl, mix the cream cheese with the mayonnaise, tuna, salt, and some chopped cherry tomatoes and lettuce. This is your filling.

  2. Cut the crusts off the low carb bread slices and place one slice on a large plate. Spread half of the filling evenly over the bread slice.

  3. Place another bread slice on top of the filling and spread the remaining filling over it.

  4. Place the last bread slice on top of the filling and press gently to make a sandwich cake.

  5. Wrap the cake in plastic wrap and refrigerate for a few hours or overnight to let the flavors meld.

  6. When you are ready to serve, unwrap the cake and cut into slices or squares.
