A flavorful, easy one-pan meal with juicy shrimp, tender potatoes, sweet corn, smoky sausage, garlic, lemon, and Mediterranean herbs. Everything cooks together in foil, making cleanup super easy.

- 1 lb large shrimp, peeled and deveined
- 1 lb baby potatoes, halved
- 2 ears fresh corn, cut into 1Β½-inch pieces
- 12 oz smoked sausage, sliced into rounds
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp dried oregano
- Β½ tsp dried thyme
- Β½ tsp Italian seasoning
- Β½ tsp salt
- ΒΌ tsp black pepper
- Β½ tsp red pepper flakes, optional
- 1 lemon, sliced
- 2 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
- 2 tbsp grated Parmesan, optional

1. Heat the oven
Preheat oven to 425Β°F (220Β°C). Tear off 4 large sheets of heavy-duty aluminum foil.
2. Cook the potatoes first
Because potatoes take longer than shrimp, place the halved potatoes in a pot of salted water. Bring to a boil and cook for 8β10 minutes, until they are just beginning to become tender. Drain well.
3. Make the seasoning mixture
In a large bowl, combine olive oil, minced garlic, smoked paprika, oregano, thyme, Italian seasoning, salt, pepper, and red pepper flakes.
Add the potatoes, corn, and sliced sausage. Toss thoroughly so everything is coated.
4. Add the shrimp
Add the shrimp and gently toss again. Don’t overmix, or the shrimp can become damaged.
5. Assemble the foil packs
Divide the mixture evenly among the four foil sheets.
Place a few lemon slices over each portion. Fold the foil tightly over the food and seal the edges to create individual packets.
6. Bake
Place the packets on a baking sheet and bake for approximately 15β18 minutes, until the shrimp are pink and opaque and the vegetables are tender.
For larger shrimp or thicker potato pieces, they may need a few extra minutes.
7. Carefully open
Let the packets rest for about 2 minutes, then carefully open themβthe steam will be very hot.
Drizzle each serving with fresh lemon juice and sprinkle with chopped parsley.
8. Optional finishing touch
Add a little grated Parmesan and another drizzle of olive oil before serving.
