For the peanut butter layer:
- 1 cup natural peanut butter (unsweetened & unsalted)
- 1/2 cup coconut flour
- 1/3 cup powdered erythritol
- 1/4 cup melted butter
- 1/2 tsp vanilla extract
- Pinch of salt
For the chocolate topping:
- 3/4 cup sugar-free chocolate chips
- 2 tbsp peanut butter or coconut oil (for smoother topping)

- Prepare the base: In a mixing bowl, stir together peanut butter, coconut flour, erythritol, melted butter, vanilla, and salt until a thick dough forms.
- Press into pan: Line an 8×8″ pan with parchment paper. Press the peanut butter mixture evenly into the bottom. Smooth the surface with a spatula or your hands.
- Make the topping: Melt the chocolate chips with peanut butter (or coconut oil) in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth.
- Pour & chill: Pour the chocolate over the peanut butter layer and spread evenly. Refrigerate for at least 1 hour, or until set.
- Slice & serve: Cut into bars and enjoy! Store in the fridge for up to 1 week or freeze for longer.
