Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Zucchini:
- Slice the zucchini into rounds or half-moons, depending on your preference.
- Sauté Vegetables:
- In a large skillet, heat olive oil over medium heat. Add chopped onions, minced garlic, and diced red bell pepper. Sauté until the vegetables are softened.
- Add Zucchini:
- Add the sliced zucchini to the skillet. Cook for about 5-7 minutes or until the zucchini is tender but not mushy. Season with salt and pepper to taste.
- Combine Ingredients:
- In a large mixing bowl, combine the sautéed vegetables with shredded mozzarella, grated Parmesan, sour cream, and chopped fresh basil or parsley. Mix well until everything is evenly combined.
- Transfer to Casserole Dish:
- Transfer the mixture to a greased baking dish or casserole dish, spreading it out evenly.
- Bake:
- Bake in the preheated oven for about 20-25 minutes or until the top is golden brown, and the cheese is melted and bubbly.
- Serve:
- Remove from the oven and let it cool for a few minutes. Serve warm.
