Ingredients:
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, finely diced
- 1 cucumber, diced
- 1-2 jalapeños, seeded and finely diced (optional for heat)
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1 tbsp lime juice (fresh or bottled)
- 1 tbsp red wine vinegar
- 1 tsp garlic powder
- Salt and pepper, to taste
Instructions:
- In a large bowl, combine the black beans, corn, red and green bell peppers, red onion, cucumber, jalapeños (if using), and cherry tomatoes.
- Add the lime juice, red wine vinegar, garlic powder, and fresh cilantro. Toss everything together until well combined.
- Season with salt and pepper to taste.
- Cover and refrigerate the cowboy caviar for at least 30 minutes to allow the flavors to meld together.
- Serve chilled with your choice of veggies, baked chips, or as a topping for salads or tacos.
