Ingredients
For the Pie:
- 1 pre-made low-fat or whole wheat pie crust (or homemade with light ingredients)
- 1 tablespoon light butter or reduced-fat butter substitute
- 1/2 cup granulated sugar substitute (like Stevia or erythritol)
- 1 tablespoon all-purpose flour or almond flour
- 2 tablespoons unsweetened cocoa powder (sugar-free, if preferred)
- 1 1/4 cups unsweetened almond milk or skim milk
- 2 egg yolks (can substitute with egg substitute for lower points)
- 1 teaspoon vanilla extract
For the Meringue:
- 3 egg whites
- 1/4 teaspoon cream of tartar
- 2 tablespoons sugar substitute (like Stevia or Splenda)
Instructions
- Prepare the pie crust:
Follow the instructions on the package to bake a low-fat or whole wheat pie crust. Let it cool completely. - Make the chocolate filling:
- In a medium saucepan, whisk together the sugar substitute, flour, and cocoa powder.
- Gradually whisk in the almond milk, egg yolks (or egg substitute), vanilla extract, and light butter.
- Cook over medium heat, whisking frequently, until the mixture thickens to a pudding-like consistency, about 5-7 minutes.
- Remove from heat and pour the filling into the pre-baked pie crust. Smooth the top with a spatula.
- Prepare the meringue:
- In a clean mixing bowl, beat the egg whites with cream of tartar until soft peaks form (about 3-5 minutes).
- Gradually add the sugar substitute while continuing to beat until stiff peaks form and the mixture looks glossy (about 1-2 more minutes).
- Top the pie with meringue:
Spread or pipe the meringue over the chocolate filling, making sure to seal the edges. Create swirls and peaks for texture. - Bake:
Preheat the oven to 350°F (175°C).
Bake the pie for 10-15 minutes, or until the meringue is lightly golden brown. - Cool and serve:
Let the pie cool for at least 1 hour to set. Slice and enjoy!
Tips for Lower Points:
- Use a sugar substitute to lower sugar points.
- Substitute egg yolks with an egg substitute to reduce fat and points.
- Opt for a low-fat or whole-wheat pie crust, or make your own with light ingredients.
This lighter version keeps the classic flavors but is more Weight Watchers-friendly!
