  • 1 teaspoon vanilla extract

For the Meringue:

  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 2 tablespoons sugar substitute (like Stevia or Splenda)

Instructions

  1. Prepare the pie crust:
    Follow the instructions on the package to bake a low-fat or whole wheat pie crust. Let it cool completely.
  2. Make the chocolate filling:
    • In a medium saucepan, whisk together the sugar substitute, flour, and cocoa powder.
    • Gradually whisk in the almond milk, egg yolks (or egg substitute), vanilla extract, and light butter.
    • Cook over medium heat, whisking frequently, until the mixture thickens to a pudding-like consistency, about 5-7 minutes.
    • Remove from heat and pour the filling into the pre-baked pie crust. Smooth the top with a spatula.
  3. Prepare the meringue:
    • In a clean mixing bowl, beat the egg whites with cream of tartar until soft peaks form (about 3-5 minutes).
    • Gradually add the sugar substitute while continuing to beat until stiff peaks form and the mixture looks glossy (about 1-2 more minutes).
  4. Top the pie with meringue:
    Spread or pipe the meringue over the chocolate filling, making sure to seal the edges. Create swirls and peaks for texture.
  5. Bake:
    Preheat the oven to 350°F (175°C).
    Bake the pie for 10-15 minutes, or until the meringue is lightly golden brown.
