Instructions:
- Combine Ingredients: In a medium-sized bowl, mix the shredded coconut, coconut flour, almond milk, maple syrup, and vanilla extract until well combined. The mixture should be thick but sticky.
- Form Truffles: Roll the mixture into 12-15 small balls (about 1 inch each). If the mixture is too sticky, you can dampen your hands with a little water or coat them in extra coconut flour to make rolling easier.
- Chill: Place the truffles on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.
