🥣 Ingredients (Makes 4 servings)
- 2 cups cooked, shredded chicken breast (zero points)
(Canned chicken works great — just drain well!) - 1/2 cup non-fat plain Greek yogurt (0 Points)
- 1/4 cup light mayo (1–2 Points total; Hellmann’s Light used here)
- 1/2 cup grapes, halved (0 Points on most plans)
- 1 stalk celery, finely chopped (0 Points)
- 1/4 cup red onion, finely chopped (0 Points)
- 1 tablespoon Dijon mustard (0 Points)
- Salt and pepper to taste
👩🍳 Instructions:
- In a mixing bowl, combine Greek yogurt, light mayo, Dijon, salt, and pepper. Mix until smooth.
- Fold in the chicken, grapes, celery, and red onion until well combined.
- Chill for 30 minutes (optional) for the flavors to meld — or serve right away!
