WW CRACKER BARREL MEATLOAF

Ingredients:

For the Meatloaf:

  • 1 lb lean ground beef (93% lean or leaner)
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped green bell pepper
  • 1/2 cup finely chopped celery
  • 1/2 cup quick oats
  • 1/2 cup unsweetened applesauce
  • 1/4 cup ketchup
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

For the Glaze:

  • 2 tablespoons ketchup
  • 1 tablespoon brown sugar (you can use a sugar substitute for a lower calorie version)
  • 1/2 teaspoon yellow mustard

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare Meatloaf Mixture:
    • In a large mixing bowl, combine the ground beef, chopped onion, green bell pepper, celery, quick oats, applesauce, 1/4 cup ketchup, egg, salt, black pepper, garlic powder, and onion powder. Mix until all the ingredients are well combined.
  3. Shape the Meatloaf:
    • Form the meatloaf mixture into a loaf shape and place it in a baking dish. You can use a standard loaf pan or shape it freeform on a baking sheet for a more rustic look.
  4. Prepare the Glaze:
    • In a small bowl, mix 2 tablespoons of ketchup, brown sugar (or sugar substitute), and yellow mustard. Stir until well combined.
  5. Glaze the Meatloaf:
    • Brush the glaze over the top of the meatloaf, ensuring it’s evenly coated.
  6. Bake:
    • Place the meatloaf in the preheated oven and bake for about 50-60 minutes or until the internal temperature reaches 160°F (71°C). If you’re unsure, you can use a meat thermometer to check the temperature.
  7. Rest and Slice:
    • Let the meatloaf rest for a few minutes before slicing. This allows the juices to redistribute and keeps the meatloaf moist.
  8. Serve:
    • Slice and serve the meatloaf with your choice of side dishes, such as steamed vegetables, a side salad, or mashed potatoes (for a classic pairing).
