WW CRACKER BARREL MEATLOAF
Ingredients:
For the Meatloaf:
- 1 lb lean ground beef (93% lean or leaner)
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped green bell pepper
- 1/2 cup finely chopped celery
- 1/2 cup quick oats
- 1/2 cup unsweetened applesauce
- 1/4 cup ketchup
- 1 large egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
For the Glaze:
- 2 tablespoons ketchup
- 1 tablespoon brown sugar (you can use a sugar substitute for a lower calorie version)
- 1/2 teaspoon yellow mustard
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Prepare Meatloaf Mixture:
- In a large mixing bowl, combine the ground beef, chopped onion, green bell pepper, celery, quick oats, applesauce, 1/4 cup ketchup, egg, salt, black pepper, garlic powder, and onion powder. Mix until all the ingredients are well combined.
- Shape the Meatloaf:
- Form the meatloaf mixture into a loaf shape and place it in a baking dish. You can use a standard loaf pan or shape it freeform on a baking sheet for a more rustic look.
- Prepare the Glaze:
- In a small bowl, mix 2 tablespoons of ketchup, brown sugar (or sugar substitute), and yellow mustard. Stir until well combined.
- Glaze the Meatloaf:
- Brush the glaze over the top of the meatloaf, ensuring it’s evenly coated.
- Bake:
- Place the meatloaf in the preheated oven and bake for about 50-60 minutes or until the internal temperature reaches 160°F (71°C). If you’re unsure, you can use a meat thermometer to check the temperature.
- Rest and Slice:
- Let the meatloaf rest for a few minutes before slicing. This allows the juices to redistribute and keeps the meatloaf moist.
- Serve:
- Slice and serve the meatloaf with your choice of side dishes, such as steamed vegetables, a side salad, or mashed potatoes (for a classic pairing).
