Ingredients:
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup cold light butter (with 50% less fat), cut into small pieces
1/2 cup fat-free Greek yogurt
1/2 cup reduced-fat shredded cheddar cheese
2 tablespoons chopped fresh chives (optional)

Instructions:
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly coat it with cooking spray.
In a mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt.
Add the cold, diced butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
Stir in the fat-free Greek yogurt, shredded cheddar cheese, and chopped chives (if using). Mix until the dough comes together. It may be a bit sticky.
Turn the dough out onto a floured surface and knead it gently a few times until it’s manageable.
Roll the dough out to about 1/2-inch thickness. Use a biscuit cutter or a glass to cut out biscuits and place them on the prepared baking sheet.
Gather any remaining dough scraps, reroll, and cut out more biscuits.
Lightly spray the tops of the biscuits with cooking spray to help them brown.
Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown and cooked through.
Remove the biscuits from the oven and let them cool for a few minutes before serving.
