WW BANANA BREAD

Ingredients:

  • 2 large ripe bananas, mashed
  • 1/4 cup unsweetened applesauce
  • 1/4 cup plain fat-free Greek yogurt
  • 1/4 cup granulated sugar substitute (e.g., Stevia, Splenda)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • Cooking spray or a small amount of light butter or oil for greasing the pan

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Pan:
    • Lightly grease a 9×5-inch (23×13 cm) loaf pan with cooking spray, light butter, or oil.
  3. Mix Wet Ingredients:
    • In a large bowl, combine the mashed bananas, unsweetened applesauce, plain Greek yogurt, granulated sugar substitute, eggs, and vanilla extract. Mix until well combined.
  4. Combine Dry Ingredients:
    • In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, and nutmeg (if using).
  5. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix; it’s okay if there are a few lumps.
  6. Bake:
    • Pour the banana bread batter into the prepared loaf pan.
  7. Bake:
    • Bake in the preheated oven for about 45-55 minutes, or until a toothpick or cake tester inserted into the center comes out clean.
  8. Cool:
    • Allow the banana bread to cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
