WW BANANA BREAD
Ingredients:
- 2 large ripe bananas, mashed
- 1/4 cup unsweetened applesauce
- 1/4 cup plain fat-free Greek yogurt
- 1/4 cup granulated sugar substitute (e.g., Stevia, Splenda)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg (optional)
- Cooking spray or a small amount of light butter or oil for greasing the pan
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Prepare the Pan:
- Lightly grease a 9×5-inch (23×13 cm) loaf pan with cooking spray, light butter, or oil.
- Mix Wet Ingredients:
- In a large bowl, combine the mashed bananas, unsweetened applesauce, plain Greek yogurt, granulated sugar substitute, eggs, and vanilla extract. Mix until well combined.
- Combine Dry Ingredients:
- In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, and nutmeg (if using).
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix; it’s okay if there are a few lumps.
- Bake:
- Pour the banana bread batter into the prepared loaf pan.
- Bake:
- Bake in the preheated oven for about 45-55 minutes, or until a toothpick or cake tester inserted into the center comes out clean.
- Cool:
- Allow the banana bread to cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
- Slice and Serve:
- Once cooled, slice the banana bread and serve.
