Ingredients:

  • 6 cooked skinless, boneless chicken breasts, boiled and shredded
  • 4 medium garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 tablespoon ground cumin
  • 16 oz canned diced green chiles
  • 45 oz canned white beans
  • 2.5 cups cooked frozen yellow corn
  • 8 tablespoons Daisy Light Sour Cream
  • 3 large uncooked onions, cut up
  • 2 cups green pepper
  • 8 cups Kirkland Organic Chicken Stock

Instructions:

  1. Prepare the Chicken: Begin by boiling the chicken breasts until they are fully cooked. Once cooked, remove from the pot and shred the chicken using two forks or your preferred method.
  2. Sauté Aromatics: In a large pot or Dutch oven, sauté the minced garlic cloves in a splash of olive oil over medium heat until fragrant. Add the diced onions and green peppers to the pot and cook until they begin to soften.
  3. Add Spices and Green Chiles: Stir in the dried oregano and ground cumin, allowing the spices to toast for a minute to enhance their flavors. Add the canned diced green chiles to the pot and stir to combine.
  4. Combine Remaining Ingredients: Add the shredded chicken, canned white beans (drained and rinsed), cooked frozen yellow corn, and Kirkland Organic Chicken Stock to the pot. Stir well to combine all the ingredients.
  5. Simmer: Bring the mixture to a gentle simmer over medium-low heat. Let the chili simmer for at least 30 minutes to allow the flavors to meld together, stirring occasionally.
  6. Finish with Sour Cream: Just before serving, add the Daisy Light Sour Cream to the pot and stir until it is fully incorporated. This will add a creamy richness to the chili.
  7. Serve and Enjoy: Ladle the warm and comforting White Chicken Chili into bowls and garnish with your favorite toppings, such as shredded cheese, chopped cilantro, or a dollop of sour cream. Serve alongside crusty bread or tortilla chips for dipping.
