Weight Watchers Yucca Fritters
Ingredients:

1 lb fresh yucca (cassava), peeled and cut into chunks
1 large egg, beaten
1/4 cup all-purpose flour (or whole wheat flour for added fiber)
2 cloves garlic, minced (optional)
1/4 cup chopped cilantro or parsley
1/4 tsp cumin powder (optional for flavor)
Salt and pepper to taste
Cooking spray (or 1 tbsp olive oil for pan-frying)
Instructions:
Cook the Yucca:
Place the peeled yucca chunks in a large pot of water and bring to a boil.
Cook for 20-30 minutes, or until the yucca is fork-tender. Drain and let cool slightly.
Once cool enough to handle, remove any fibrous strands from the center of the yucca.
Mash the Yucca:
Mash the yucca with a fork or potato masher until smooth. Add the beaten egg, flour, garlic, cilantro (or parsley), cumin, salt, and pepper. Mix everything well to form a dough-like consistency.
Form the Fritters:
Take small portions of the yucca mixture (about 1-2 tablespoons) and form them into small patties or balls.


Cook the Fritters:
For Pan-Frying: Heat a non-stick skillet over medium heat and lightly coat with cooking spray or 1 tbsp olive oil. Cook the fritters for 3-4 minutes on each side, until golden brown and crispy.
For Air-Frying (Healthier Option): Preheat your air fryer to 375°F. Spray the fritters with cooking spray and air fry for 10-12 minutes, flipping halfway through, until crispy and golden.
Serve:
Serve the fritters hot with a side of low-fat Greek yogurt, salsa, or any zero-point dipping sauce.
