Weight Watchers Strawberry Bombs

Ingredients:

  • 2 cups whole wheat flour
  • 1 large egg
  • 1/4 cup sugar substitute (like Stevia or Splenda)
  • Pinch of salt
  • 2 1/4 teaspoons dry yeast
  • 3/5 cup warm skim milk
  • 1/4 cup light butter (softened)
  • Cooking spray (for frying)
  • 1 cup fat-free whipped topping
  • 1 cup fresh strawberries, chopped
  • Powdered sugar substitute (for garnish)

Directions:

  1. Prepare the Yeast Mixture:
    • In a medium bowl, combine the sugar substitute, yeast, and warm skim milk. Stir to dissolve.
    • Whisk in the egg.
  2. Make the Dough:
    • Add the whole wheat flour and salt, and start to mix the dough with a spatula. Continue to knead it with your hands until you receive an elastic dough.
    • Add the light butter and continue to knead until the butter is fully incorporated into the dough.
    • Form a ball from the dough, cover with a kitchen cloth or plastic wrap, and allow to rise for an hour.
  3. Form the Dough Balls:
    • Divide the dough into 8 parts and roll each into a ball. Cover and let sit for 30 minutes.
    • Flatten each ball a bit and roll it again into a ball. Cover and let sit for another 30 minutes.
  4. Cook the Dough Balls:
    • Spray a pan with cooking spray and heat over medium-low heat. Fry the balls in the pan for 2-3 minutes on each side until golden brown.
    • Let them cool a bit and cut in half lengthwise, like a burger bun.
  5. Assemble the Strawberry Bombs:
    • Top one half of each dough ball with fat-free whipped topping and chopped strawberries. Close with the other half.
    • Sprinkle with powdered sugar substitute and serve.
