Weight Watchers Skinny Meatloaf Recipe
Ingredients:
1 lb lean ground turkey or chicken
1 cup old-fashioned oats (uncooked)
1 cup grated zucchini (excess moisture squeezed out)
1/2 cup finely diced onion
1/2 cup finely diced bell pepper (any color)
2 cloves garlic, minced
1/4 cup ketchup (look for a reduced-sugar option)
1/4 cup Worcestershire sauce
2 tablespoons Dijon mustard
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions:
Preheat your oven to 375°F (190°C).

In a large bowl, combine the ground turkey or chicken with oats, grated zucchini, diced onion, diced bell pepper, and minced garlic.

In a small bowl, mix together ketchup, Worcestershire sauce, Dijon mustard, dried thyme, dried oregano, salt, and black pepper.

Add the sauce mixture to the large bowl with the meat and vegetables. Mix everything together until well combined.

Spray a loaf pan with cooking spray to prevent sticking.

Transfer the meatloaf mixture into the prepared loaf pan, shaping it into a loaf.

Bake in the preheated oven for about 45-50 minutes or until the internal temperature reaches 165°F (74°C).

Let the meatloaf rest for a few minutes before slicing.
