🌟 Weight Watchers Peanut Butter Blossom Cookies

Ingredients (makes ~24 cookies)

  • 1 cup reduced-fat peanut butter (creamy or crunchy)
  • ½ cup sugar substitute (like Stevia or Monkfruit, or use regular sugar if preferred)
  • 1 large egg
  • 1 tsp vanilla extract
  • Pinch of salt
  • 24 Hershey’s Kisses (or sugar-free chocolate kisses to lower points)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix peanut butter, sugar substitute, egg, vanilla, and salt until smooth.
  3. Roll dough into small balls (about 1 tbsp each) and place on baking sheet.
  4. Bake for 8–10 minutes, until edges are set but centers are still soft.
  5. Immediately press a chocolate kiss in the center of each cookie.
  6. Cool on a wire rack until chocolate sets.
