🌟 Weight Watchers Peanut Butter Blossom Cookies
Ingredients (makes ~24 cookies)
- 1 cup reduced-fat peanut butter (creamy or crunchy)
- ½ cup sugar substitute (like Stevia or Monkfruit, or use regular sugar if preferred)
- 1 large egg
- 1 tsp vanilla extract
- Pinch of salt
- 24 Hershey’s Kisses (or sugar-free chocolate kisses to lower points)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix peanut butter, sugar substitute, egg, vanilla, and salt until smooth.
- Roll dough into small balls (about 1 tbsp each) and place on baking sheet.
- Bake for 8–10 minutes, until edges are set but centers are still soft.
- Immediately press a chocolate kiss in the center of each cookie.
- Cool on a wire rack until chocolate sets.
