Weight Watchers-Friendly Peanut Butter Pretzel Bites

Ingredients:

  • 1 cup smooth peanut butter (use a reduced-fat version)
  • 1/2 cup light butter, softened
  • 1 1/2 cups powdered sugar (consider using a sugar substitute like Swerve for fewer points)
  • 1 teaspoon vanilla extract (optional)
  • Approximately 72 small pretzels (whole grain or low-sodium for a healthier option)
  • 1 package (12 oz) semi-sweet chocolate chips (use a reduced-sugar version)

Directions:

  1. Prepare the Peanut Butter Mixture:
    • In a large bowl, combine the light butter, peanut butter, vanilla extract (if using), and powdered sugar (or sugar substitute). Mix with a hand mixer on low speed until combined, then increase the speed to smooth the mixture.
  2. Assemble the Pretzel Bites:
    • Using a small cookie scoop, scoop the peanut butter mixture and place it on a pretzel. Top with an additional pretzel and press together until the peanut butter mixture pokes through the pretzel holes.
  3. Chill the Pretzel Bites (Optional):
    • Chill the pretzel bites in the refrigerator for 20-30 minutes before dipping in chocolate.
  4. Melt the Chocolate:
    • Melt the chocolate chips using an Instant Pot or microwave method until smooth. If using the microwave, heat in 30-second intervals, stirring in between, until fully melted.
  5. Dip the Pretzel Bites:
    • Dip each pretzel bite halfway into the melted chocolate and place it on a lined cookie sheet to cool.
  6. Cool and Set:
    • Allow the pretzel bites to cool until the chocolate is hard, about 30 minutes.
