Weight Watchers-Friendly Chocolate Covered Donuts

Ingredients:

For the Sourdough:

  • 3 grams fresh yeast
  • 90 grams lukewarm water
  • 140 grams all-purpose flour

For the Final Dough:

  • Sourdough (from above)
  • 3 egg yolks
  • 15 grams milk
  • 30 grams sugar
  • 20 grams fresh yeast
  • 125 grams all-purpose flour
  • Two pinches of salt
  • 30 grams unsalted butter

For the Chocolate Coating:

  • 100 grams dark chocolate (at least 70% cocoa)
  • 1 teaspoon unsalted butter
  • 3 tablespoons milk
  • 50 grams icing sugar

Preparation:

  1. Prepare the Sourdough:
  • In a bowl, mix all the sourdough ingredients (yeast, lukewarm water, and flour) until combined. Shape into a ball and cover with a cloth. Let it rise in a warm place until doubled in size, approximately 1 hour.
  1. Prepare the Final Dough:
  • In the bowl of a bread maker, combine the milk with dissolved yeast, egg yolks, sugar, sourdough, flour, and salt. Select the “knead only” program. After 10 minutes, add the butter. Continue kneading until a smooth dough forms. Transfer to a greased bowl and let it rise again until doubled in volume, about 1 hour.
  1. Shape and Rise:
  • Punch down the dough and divide it into 11 equal portions. Shape each into a ball and use your fingers to create a hole in the center. Place on baking paper and let rise for 30 minutes.
  1. Fry Donuts:
  • Heat oil in a deep pan and fry the donuts until golden brown. Remove with a slotted spoon and drain on absorbent paper.
  1. Prepare the Chocolate Coating:
  • In a deep plate, combine dark chocolate, butter, and milk. Microwave in 1-minute intervals, stirring between each, until fully melted and smooth. If needed, microwave for an additional 1-2 minutes.
  1. Coat Donuts:
  • Dip each donut into the chocolate coating, allowing excess to drip off. Place on a rack to cool and let the chocolate set.
