📝 Ingredients (Makes 4 muffins)

  • 1 cup self-rising flour (or almond flour + 1 tsp baking powder for lower carb)
  • 1 cup nonfat Greek yogurt

👩‍🍳 Instructions

1️⃣ In a bowl, mix flour and Greek yogurt until a dough forms.
2️⃣ Knead lightly on a floured surface for about 1–2 minutes until smooth.
3️⃣ Divide into 4 equal pieces and shape into thick rounds.
4️⃣ Lightly spray a nonstick skillet and heat over medium-low.
5️⃣ Cook muffins covered for 5–6 minutes per side until golden and cooked through.
6️⃣ Cool slightly, slice, and toast if desired.
