Ingredients that Create Magic:

  • 1 1/2 cups self-rising flour (Gold Medal recommended)
  • 2/3 cup unsweetened cocoa powder
  • 1 cup baking sugar substitute or white granulated sugar substitute (Lakanto Monkfruit Baking Sweetener preferred)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 large eggs or 4 large egg whites
  • 3/4 cup skim or unsweetened almond milk
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 10 Tbsp no sugar added chocolate chips (Lakanto sugarless chocolate chips)

Crafting Perfection:

Preheat the Oven for Blissful Aromas: Begin your culinary symphony by preheating the oven to 350 degrees. Line 18 muffin cups with paper or foil liners, or generously spray them with nonstick cooking spray for an equally delightful outcome.

Compose the Flour Symphony: In a large mixing bowl, whisk together self-rising flour, cocoa powder, sugar substitute, baking powder, and baking soda. Introduce the richness of chocolate with the addition of no sugar added chocolate chips, creating a symphony of flavors.

Whisking Elegance into Liquid Harmony: In a separate mixing bowl, whisk together unsweetened almond milk or skim milk. Add the eggs or egg whites, vanilla extract, and unsweetened applesauce. Let the ingredients waltz together until well combined.

Marrying the Melodies: Gradually introduce the liquid ensemble into the dry ingredients, stirring until just combined. Embrace the harmony but avoid overmixing—the secret to the muffins’ light and fluffy texture.

The Art of Muffin Liners and Baking Ballet: Fill the prepared muffin liners evenly with batter, using a 1/4 measuring cup. Sprinkle the remaining chocolate chips atop each muffin, adding an extra layer of visual and textural appeal.

Bake to Perfection: Let the muffins pirouette in the oven for 15-17 minutes or until the center emerges clean when tested with a toothpick.
