Weight Watchers Doritos Chicken Casserole

Ingredients:

  • 3 cups cooked, shredded chicken breast
  • 1 can (10.5 oz) reduced-fat cream of chicken soup
  • 1 cup plain non-fat Greek yogurt
  • 1 can (10 oz) Ro-Tel diced tomatoes with green chilies, undrained
  • 1 cup reduced-fat shredded cheddar cheese
  • 1 packet taco seasoning mix (use a homemade blend with no sugar for 0 points)
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers
  • 2 oz (about 2 cups) Nacho Cheese Doritos, crushed

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Filling:
    • In a large bowl, combine the cooked shredded chicken, reduced-fat cream of chicken soup, plain non-fat Greek yogurt, Ro-Tel tomatoes, taco seasoning, chopped onions, and chopped bell peppers. Mix until well combined.
  3. Assemble the Casserole:
    • Spray a 9×13-inch baking dish with non-stick cooking spray.
    • Spread half of the crushed Doritos on the bottom of the baking dish.
    • Pour the chicken mixture over the Doritos layer and spread evenly.
    • Sprinkle the remaining crushed Doritos over the top of the chicken mixture.
