Weight Watchers Doritos Chicken Casserole

Ingredients:
- 3 cups cooked, shredded chicken breast
- 1 can (10.5 oz) reduced-fat cream of chicken soup
- 1 cup plain non-fat Greek yogurt
- 1 can (10 oz) Ro-Tel diced tomatoes with green chilies, undrained
- 1 cup reduced-fat shredded cheddar cheese
- 1 packet taco seasoning mix (use a homemade blend with no sugar for 0 points)
- 1/2 cup chopped onions
- 1/2 cup chopped bell peppers
- 2 oz (about 2 cups) Nacho Cheese Doritos, crushed
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C).
- Prepare the Filling:
- In a large bowl, combine the cooked shredded chicken, reduced-fat cream of chicken soup, plain non-fat Greek yogurt, Ro-Tel tomatoes, taco seasoning, chopped onions, and chopped bell peppers. Mix until well combined.
- Assemble the Casserole:
- Spray a 9×13-inch baking dish with non-stick cooking spray.
- Spread half of the crushed Doritos on the bottom of the baking dish.
- Pour the chicken mixture over the Doritos layer and spread evenly.
- Sprinkle the remaining crushed Doritos over the top of the chicken mixture.
- Top with the reduced-fat shredded cheddar cheese.
- Bake:
