Weight Watchers chickpea and feta salad

Ingredients

2 cups canned chickpeas, rinsed and drained
1-2 garlic cloves, or to taste, finely minced
3 tablespoons, thinly sliced scallions
1/2 large sweet red bell pepper, diced
1/2 cup diced English cucumber
2 tablespoons fresh, finely minced parsley
9 large black or green olives, pitted and roughly chopped
1/2 cup crumbled feta cheese


Instructions

In a small bowl, whisk together 1/4 cup of olive oil, 3 tablespoons of lemon juice, 1 teaspoon of dried oregano, salt and pepper to taste. This is your dressing.
In a large bowl, toss the chickpeas with the garlic and scallions. Add the red bell pepper, cucumber, parsley, and olives and toss again.
Sprinkle the feta cheese over the salad and drizzle with the dressing. Toss gently to combine.
Refrigerate the salad for at least an hour to let the flavors meld. Enjoy!
