Ingredients:

- 2 large egg whites

- 1/4 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/4 cup stevia or another sugar substitute (optional, adjust to taste)
- Pinch of salt
Instructions:
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.
- In a large bowl, combine the oats, protein powder, baking powder, cinnamon, salt, and sweetener (if using).
- In another bowl, whisk together the egg whites, applesauce, almond milk, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Divide the batter evenly among the muffin tin cups, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
