Ingredients:

2 medium carrots, grated (or zucchini, squeeze out water)

1 small onion, finely chopped

2 eggs (or 1 egg + 2 egg whites to reduce points)

¼ cup whole wheat flour (or chickpea flour for extra fiber)

2 tbsp grated light cheese (optional, adds flavor but a point or two)

½ tsp garlic powder

½ tsp paprika (or chili flakes for spice)

Salt & pepper to taste

Cooking spray (or 1–2 tsp olive oil, brushed on pan)

Fresh chopped scallions for garnish


Instructions:

  1. Prep veggies: Grate carrots (or zucchini—if zucchini, squeeze out extra water in a towel).
  2. Mix batter: In a bowl, combine veggies, onion, eggs, flour, seasonings, and cheese (if using). Stir well until it forms a thick batter.
  3. Cook: Heat a nonstick skillet over medium heat. Lightly spray with cooking spray. Drop spoonfuls of mixture into the pan, flatten slightly.
  4. Fry: Cook 3–4 minutes per side until golden brown and crisp.
  5. Serve: Sprinkle with fresh scallions. Enjoy with a 0-point dip like fat-free Greek yogurt mixed with lemon and herbs.

Tips to keep it WW-friendly:

Use air fryer instead of pan-frying for fewer points.

Swap flour with oats for more fiber.

Skip cheese if you want to save points.
