Vegan Zucchini Donuts
Ingredients:
ZUCCHINI: 1 1/2 pounds
SALT: 1 teaspoon
FLOUR: 1/4 cup
VEGAN PARMESAN: 1/2 cup (look for plant-based alternatives)
FLAX EGG: 1 (Mix 1 tablespoon ground flaxseed with 3 tablespoons water, let it sit for a few minutes until it thickens)
GARLIC POWDER: 2 teaspoons
BLACK PEPPER: 1 teaspoon
OLIVE OIL: 3 tablespoons
Instructions:
Grate the zucchini into a large bowl. Squeeze the excess water from the zucchini to release as much liquid as possible. You can do this by using a small colander or squeezing the zucchini through cheesecloth. Strive to remove as much water as possible.
Add the salt, flour, vegan parmesan, flax egg, pepper, and garlic powder to the bowl. Mix well to form a cohesive dough.
Shape the dough into donuts of the size of your choice and place them on a plate.
Heat the olive oil in a frying pan over medium heat. Place the vegan zucchini donuts in the hot oil and brown them for about 2 minutes.
Flip the donuts and fry for an additional 1 to 2 minutes. Remove the fritters from the hot oil and place them on a plate lined with paper towels.
Serve the vegan zucchini donuts warm with your favorite vegan dip or enjoy them plain
