Vegan Sweet Potato Pie Recipe

Ingredients:

For the crust:

  1. 1 ½ cups of all-purpose flour
  2. ½ teaspoon of salt
  3. ½ cup of solid coconut oil
  4. 4-6 tablespoons of ice water

For the filling:

  1. 2 cups of mashed sweet potatoes (approximately 2 medium sweet potatoes, cooked and peeled)
  2. ½ cup of maple syrup or agave nectar
  3. ½ cup of coconut cream
  4. ¼ cup of almond milk (or any other non-dairy milk)
  5. 2 tablespoons of cornstarch or arrowroot powder
  6. 1 teaspoon of vanilla extract
  7. 1 teaspoon of ground cinnamon
  8. ½ teaspoon of ground nutmeg
  9. ¼ teaspoon of ground ginger
  10. ¼ teaspoon of salt

Instructions:

For the crust:

  1. In a mixing bowl, combine the all-purpose flour and salt.
  2. Add the solid coconut oil to the mixture and blend until it resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, and mix until the dough forms.
  4. Shape the dough into a ball, flatten it into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
  5. Preheat the oven to 375°F (190°C).
  6. Roll out the chilled dough on a floured surface to fit a 9-inch pie dish. Carefully transfer the rolled-out dough to the pie dish, trim any excess, and crimp the edges.
  7. Use a fork to poke some holes in the bottom of the crust.
  8. Blind bake the crust by lining it with parchment paper and filling it with pie weights or dried beans. Bake for about 15 minutes. Remove the weights and parchment paper and bake for an additional 5 minutes until lightly golden. Set aside to cool.

For the filling:

  1. In a blender or food processor, combine the mashed sweet potatoes, maple syrup or agave nectar, coconut cream, almond milk, cornstarch or arrowroot powder, vanilla extract, cinnamon, nutmeg, ginger, and salt. Blend until smooth and well combined.
  2. Pour the sweet potato mixture into the pre-baked pie crust, smoothing the top evenly.
  3. Bake the pie in the preheated oven for 45-50 minutes or until the filling is set and slightly jiggles in the center.
