VEGAN SUGAR-FREE CREAM CHEESE POUND CAKE

INGREDIENTS:
Dry Ingredients:
- 2 cups all-purpose flour
- 1 cup almond flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Wet Ingredients:
- 1 cup vegan cream cheese, softened
- 1 cup unsweetened applesauce
- 1 cup almond milk (or any plant-based milk)
- 1/2 cup coconut oil, melted
- 1 cup sugar-free sweetener (like erythritol or stevia), adjust to taste
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla extract
INSTRUCTIONS:
- Preheat your oven to 350°F (175°C). Grease and flour a standard-sized loaf pan.
- In a large mixing bowl, whisk together the dry ingredients: all-purpose flour, almond flour, baking powder, baking soda, and salt.
- In another bowl, beat together the softened vegan cream cheese, applesauce, melted coconut oil, almond milk, sugar-free sweetener, apple cider vinegar, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the pound cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Once the cake has cooled, you can optionally drizzle it with a sugar-free glaze made with a sugar-free powdered sweetener and a small amount of almond milk.
