VEGAN SUGAR-FREE CREAM CHEESE POUND CAKE

INGREDIENTS:

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 cup almond flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients:

  • 1 cup vegan cream cheese, softened
  • 1 cup unsweetened applesauce
  • 1 cup almond milk (or any plant-based milk)
  • 1/2 cup coconut oil, melted
  • 1 cup sugar-free sweetener (like erythritol or stevia), adjust to taste
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract
INSTRUCTIONS:
  1. Preheat your oven to 350°F (175°C). Grease and flour a standard-sized loaf pan.
  2. In a large mixing bowl, whisk together the dry ingredients: all-purpose flour, almond flour, baking powder, baking soda, and salt.
  3. In another bowl, beat together the softened vegan cream cheese, applesauce, melted coconut oil, almond milk, sugar-free sweetener, apple cider vinegar, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the pound cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  8. Once the cake has cooled, you can optionally drizzle it with a sugar-free glaze made with a sugar-free powdered sweetener and a small amount of almond milk.
