Vegan Smothered Green Beans

Ingredients:

  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon nutritional yeast
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Red pepper flakes for garnish (optional)

Instructions:

  1. Blanch Green Beans:
    • Bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, or until they are bright green and slightly tender. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Once cooled, drain and set aside.
  2. Saute Onion and Garlic:
    • In a large skillet, heat olive oil over medium heat. Add thinly sliced onion and minced garlic. Saute for 3-4 minutes until the onions are translucent and fragrant.
  3. Make Sauce:
    • In a small bowl, whisk together vegetable broth, soy sauce (or tamari), nutritional yeast, and cornstarch until smooth.
  4. Combine Ingredients:
    • Add the blanched green beans to the skillet with the sauteed onions and garlic.
  5. Cook Beans:
    • Pour the sauce mixture over the green beans in the skillet. Stir well to combine.
  6. Simmer:
    • Cook the green beans in the sauce over medium-low heat for 5-7 minutes, or until the sauce has thickened and the green beans are heated through.
  7. Season:
    • Season the smothered green beans with salt and pepper to taste. Adjust seasoning if needed.
  8. Serve:
    • Transfer the smothered green beans to a serving dish. Garnish with red pepper flakes if desired. Serve hot as a delicious vegan side dish.
