Vegan Smothered Green Beans
Ingredients:
- 1 pound fresh green beans, trimmed
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 tablespoon soy sauce or tamari
- 1 tablespoon nutritional yeast
- 1 tablespoon cornstarch
- Salt and pepper to taste
- Red pepper flakes for garnish (optional)
Instructions:
- Blanch Green Beans:
- Bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, or until they are bright green and slightly tender. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Once cooled, drain and set aside.
- Saute Onion and Garlic:
- In a large skillet, heat olive oil over medium heat. Add thinly sliced onion and minced garlic. Saute for 3-4 minutes until the onions are translucent and fragrant.
- Make Sauce:
- In a small bowl, whisk together vegetable broth, soy sauce (or tamari), nutritional yeast, and cornstarch until smooth.
- Combine Ingredients:
- Add the blanched green beans to the skillet with the sauteed onions and garlic.
- Cook Beans:
- Pour the sauce mixture over the green beans in the skillet. Stir well to combine.
- Simmer:
- Cook the green beans in the sauce over medium-low heat for 5-7 minutes, or until the sauce has thickened and the green beans are heated through.
- Season:
- Season the smothered green beans with salt and pepper to taste. Adjust seasoning if needed.
- Serve:
- Transfer the smothered green beans to a serving dish. Garnish with red pepper flakes if desired. Serve hot as a delicious vegan side dish.
