Ingredients:

  • 1 cup flour
  • 2 cups soy milk
  • 1 tbsp oil
  • Pinch of salt
  • Spray oil or vegan butter to fry
  • Lemon juice and sugar to serve

Method:

  1. Put a frying pan over medium heat.
  2. Whisk the flour, soy milk, oil, and salt together in a bowl until smooth.
  3. Spray the pan with oil or wipe it with vegan butter.
  4. Pour just enough batter into the pan to cover the base.
  5. Cook until the top is set, then flip and cook the other side until golden brown.
  6. Serve with a squeeze of lemon juice and a sprinkle of sugar. Roll or fold into quarters.
