
Ingredients:
- 1 cup flour
- 2 cups soy milk
- 1 tbsp oil
- Pinch of salt
- Spray oil or vegan butter to fry
- Lemon juice and sugar to serve
Method:
- Put a frying pan over medium heat.
- Whisk the flour, soy milk, oil, and salt together in a bowl until smooth.
- Spray the pan with oil or wipe it with vegan butter.
- Pour just enough batter into the pan to cover the base.
- Cook until the top is set, then flip and cook the other side until golden brown.
- Serve with a squeeze of lemon juice and a sprinkle of sugar. Roll or fold into quarters.
