Vegan Mushroom Sausage Puffs

Ingredients:

  • 1 roll vegan puff pastry (rectangular)
  • 3 ounces vegan sausages (about 85 g)
  • 3 ounces mushrooms, sliced (about 85 g)
  • 3.5 ounces vegan cheese (fontina or mozzarella style, about 100 g)
  • 1 flax egg (1 tablespoon ground flaxseed meal + 3 tablespoons water)
  • 2 tablespoons nutritional yeast
  • Salt and pepper, to taste
  • 1 clove garlic, minced
  • 2 tablespoons extra-virgin olive oil

Instructions:

  1. Prepare the Stuffing:
    • Follow instructions for sautéing mushrooms from a separate recipe or sauté them in a large pan with extra-virgin olive oil until tender. Set aside.
    • Slice the vegan sausages into 1-inch thick slices and sauté them in the same pan with olive oil until browned. Add minced garlic and cook for an additional minute. Season with salt and pepper to taste.
  2. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  3. Prepare the Puff Pastry:
    • Roll out the vegan puff pastry on a work surface lined with parchment paper. Cut it into four equal rectangles.
  4. Prepare the Filling:
    • In a mixing bowl, combine the cooked mushrooms, sautéed vegan sausages, cubed vegan cheese, nutritional yeast, and salt and pepper to taste. Mix well to combine.
  5. Assemble the Puffs:
    • Spoon the filling onto each puff pastry rectangle, dividing it evenly among them. Fold the pastry over the filling, sealing the edges with a fork.
  6. Bake:
    • Transfer the assembled puffs to the prepared baking sheet. Brush the tops of the puffs with the flax egg.
    • Bake in the preheated oven for about 15 minutes, or until the puffs are golden brown and puffed up.
  7. Serve:
    • Once baked, remove the vegan mushroom sausage puffs from the oven and let them cool slightly before serving.
