These mini eggplant pizzas are a simple and tasty idea for dinner that are vegan and low carb friendly. They are made with eggplant slices, salt, olive oil, tomato sauce, vegan cheese, and oregano. They are easy to make and perfect for a satisfying meal.
Ingredients:
• 1 eggplant (medium sized round)
• Salt
• Extra virgin olive oil
• 200 g (1 cup) of tomato sauce
• 125 g of vegan cheese (you can use store-bought or make your own with cashews, nutritional yeast, lemon juice, salt, and water)
• Oregano
Method:
1.Slice the eggplant to a thickness of 1 cm. Arrange them in a baking dish lined with baking paper. Cut the surface with a knife, making oblique cuts, but without completely piercing.
2.Salt them and add 1/2 teaspoon of oil on each slice. Bake at 180°C/360°F for 10 minutes.
3.When the eggplants are cooked, top them with tomato sauce, vegan cheese cubes, salt, oregano, and a drop of oil.
4.Bake the eggplant mini pizzas in the oven at 180°C/360°F for 15 minutes.
