Vegan Egg Sandwich

Ingredients
- 250 g extra firm tofu
- 1/3 cup chopped chives
- 3 tbsp vegan mayo
- 1/2 tsp black salt
- 1/2 tsp turmeric
- 1/4 tsp black pepper
- 1 tbsp nutritional yeast
- Vegan butter
- 6 slices white bread
Instructions
- Prepare the “Egg Salad” Mixture:
- Crumble or mash the tofu with a fork until it resembles a mince-like texture.
- In a mixing bowl, combine the crumbled tofu with chopped chives, vegan mayo, black salt, turmeric, black pepper, and nutritional yeast. Mix well to incorporate all ingredients evenly.
- Prepare the Sandwiches:
- Slice off the crusts from the bread slices. You can toast the crusts and blend them to make homemade breadcrumbs for later use.
- Spread vegan butter on both sides of each bread slice.
- Spoon around 2 scoops of the prepared “egg salad” mixture onto one side of the bread and spread evenly.
- Place another bread slice on top to form a sandwich.
- Serve:
- Slice the sandwiches in half diagonally or vertically.
