Vegan Dump and Bake Meatless Meatball Casserole

Note: You can find vegan meatless meatballs at many grocery stores or make your own using plant-based ingredients.

Ingredients:

  • 1 Bag of frozen vegan meatless meatballs (defrosted)
  • 1 Jar of vegan marinara or spaghetti sauce
  • 3 Cups of vegetable broth or water
  • 1 Box of bowtie pasta (ensure it’s vegan-friendly)
  • 1 tsp. Italian seasoning
  • 1 ½ cups vegan Mozzarella-style cheese
  • ¼ cup vegan Parmesan-style cheese (grated)

Instructions:

  1. Preheat the oven to 400 degrees Fahrenheit (200°C).
  2. In a high-sided oven-proof pot or skillet, add the vegan meatless meatballs, jar of vegan sauce, vegetable broth (or water), pasta, and Italian seasoning. Stir to combine all the ingredients.
  3. Cover the pot or skillet and bake in the preheated oven for 35 minutes.
  4. After 35 minutes, remove the cover and top the casserole with vegan Mozzarella-style and Parmesan-style cheeses.
  5. Bake for an additional 10-15 minutes, or until the cheese is melted and slightly golden.
  6. Let the casserole sit for about 10 minutes before serving.
