Vegan Creamsicle Orange Fluff

Ingredients:

  • 1 can (13.5 oz) full-fat coconut milk, refrigerated overnight
  • 1/2 cup orange juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup (or more to taste)
  • 1 cup vegan marshmallows
  • 1 cup mandarin orange segments, drained (fresh or canned)
  • Zest of 1 orange (optional, for garnish)

Instructions:

  1. Open the can of coconut milk that has been refrigerated overnight. Scoop out the solid coconut cream that has risen to the top and place it in a mixing bowl. Discard the liquid or save it for another use.
  2. Using a hand mixer or stand mixer, whip the coconut cream until it becomes light and fluffy, about 2-3 minutes.
  3. Add the orange juice, vanilla extract, and maple syrup to the whipped coconut cream. Mix until well combined and smooth.
  4. Gently fold in the vegan marshmallows and mandarin orange segments until evenly distributed.
  5. Transfer the mixture to a serving bowl or individual dessert cups.
  6. Refrigerate the Creamsicle Orange Fluff for at least 1 hour before serving to allow it to set.
  7. Once chilled, garnish with orange zest, if desired, before serving.
