- 1 teaspoon vanilla extract
- 1 tablespoon maple syrup (or more to taste)
- 1 cup vegan marshmallows
- 1 cup mandarin orange segments, drained (fresh or canned)
- Zest of 1 orange (optional, for garnish)
Instructions:
- Open the can of coconut milk that has been refrigerated overnight. Scoop out the solid coconut cream that has risen to the top and place it in a mixing bowl. Discard the liquid or save it for another use.
- Using a hand mixer or stand mixer, whip the coconut cream until it becomes light and fluffy, about 2-3 minutes.
- Add the orange juice, vanilla extract, and maple syrup to the whipped coconut cream. Mix until well combined and smooth.
- Gently fold in the vegan marshmallows and mandarin orange segments until evenly distributed.
- Transfer the mixture to a serving bowl or individual dessert cups.
- Refrigerate the Creamsicle Orange Fluff for at least 1 hour before serving to allow it to set.
- Once chilled, garnish with orange zest, if desired, before serving.
