Ingredients:

  • 8 oz. vegan cream cheese, softened
  • 1/2 cup finely chopped artichoke hearts
  • 1/2 cup finely chopped spinach
  • 1 cup shredded vegan mozzarella cheese, divided
  • 1/2 cup nutritional yeast (for cheesy flavor)
  • 1 garlic clove, minced
  • 1 tablespoon chopped parsley, plus more for garnish
  • 1/2 teaspoon crushed red pepper flakes, plus more for garnish
  • Kosher salt
  • Freshly ground black pepper
  • 2 bagels, halved

Directions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a medium baking sheet with parchment paper.
  2. Prepare Mixture: In a large bowl, combine the softened vegan cream cheese, chopped artichoke hearts, chopped spinach, 2/3 cup of the shredded vegan mozzarella cheese, nutritional yeast, minced garlic, chopped parsley, and crushed red pepper flakes.   3. Assemble Bagels: Place the bagel halves cut side up on the prepared baking sheet. Spread each half generously with the spinach-artichoke mixture. Top with the remaining shredded vegan mozzarella cheese.
  4. Bake: Bake in the preheated oven until the bagels are warmed through and the cheese is melted and bubbly, about 10 to 12 minutes. For a golden top, broil for an additional 1-2 minutes if desired.
