Vegan Cabbage Patties/Fritters.

Ingredients

4 cups of cabbage finely chopped

3 garlic cloves finely chopped

1 small onion finely chipped

2-3 tablespoons parsley finely chopped

salt and black pepper to taste

2 tablespoons all purpose flour

Method

You can use a food processor to make these patties. Place the vegetables and herbs into the food processor until they are all finely chopped. Transfer to a mixing bowl.

If you don’t have a food processor, you will have to finely chop up the cabbage and herbs and place into a mixing bowl.

Season with salt and black pepper and mix all the ingredients together very well. Taste to see if salt is adequate.

Add the flour and mix together. Add about a teaspoon of water and mix into the ingredients. You don’t want the mixture to be too moist. If so you will need to add more flour. Take about one ice cream scoop of the mixture and form into a ball. Set aside. Repeat until all the mixture is used up.

Put a frying pan on the stove and allow it to hot. Add some oil and allow the oil to hot. Adjust flame to medium heat. Add the patties to the hot oil. Allow them to get golden brown on each side – about 3 minutes on each side.
