Vegan Broccoli & Mushroom Stir Fry

  • 1/4 cup low-sodium soy sauce or coconut aminos
  • 1 tbsp rice vinegar

  • 1 tsp cornstarch + 2 tbsp water (for thickening)
  • Pinch of black pepper and red chili flakes (optional, for a kick!) 

How to Make It:

  1. Heat oil in a large pan or wok over medium-high heat.
  2. Toss in the mushrooms and cook for 4–5 minutes, until they start to brown and release their juices.
  3. Add the broccoli, garlic, and ginger. Stir-fry for another 4–5 minutes until the broccoli turns bright green and tender-crisp.
  4. In a small bowl, whisk together soy sauce, vinegar, maple syrup, and the cornstarch slurry.
  5. Pour the sauce into the pan and stir until everything is coated and the sauce thickens up beautifully.
  6. Season with pepper or chili flakes, and serve hot!
