
Vegan Blooming Quesadilla Ring
Ingredients:
- 6 large flour tortillas (use gluten-free if needed)
- 2 cups vegan shredded cheese
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup diced bell peppers (any color)
- 1/4 cup diced red onion
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- Cooking spray or oil, for greasing
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper or greasing it with cooking spray.
- Prepare Filling:
- In a mixing bowl, combine the black beans, corn kernels, diced bell peppers, diced red onion, ground cumin, chili powder, garlic powder, paprika, and salt. Mix well to evenly distribute the spices.
- Assemble Quesadilla Ring:
- Place one flour tortilla on the prepared baking sheet. Sprinkle a layer of vegan shredded cheese over the tortilla, leaving a small border around the edges. Spoon some of the prepared filling mixture evenly over the cheese. Top with another tortilla and press gently to seal the edges. Repeat this process, alternating layers of cheese and filling, until all tortillas and filling are used, finishing with a final tortilla on top.
- Cut and Shape:
- Using a sharp knife, cut a small circle in the center of the stacked tortillas, leaving about a 2-inch border around the edges. Discard the cut-out circle. Then, use the knife to make cuts from the outer edge of the tortillas towards the center, creating “petals” around the circle.
- Bake:
- Lightly spray or brush the top of the assembled quesadilla ring with cooking spray or oil. Bake in the preheated oven for 20-25 minutes, or until the tortillas are golden brown and crispy.
- Serve:
- Once baked, remove the vegan blooming quesadilla ring from the oven and let it cool for a few minutes. Serve hot with your favorite dipping sauce, such as salsa, guacamole, or vegan sour cream. Enjoy!
