Vegan Baked Broccoli and Cauliflower Casserole

Ingredients:

  • 1 medium head of broccoli, cut into florets
  • 1 medium head of cauliflower, cut into florets
  • 1 cup raw cashews (soaked in hot water for 15 minutes)
  • 1 cup unsweetened almond milk (or other plant-based milk)
  • 1/4 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon onion powder
  • 1/2 teaspoon turmeric (for color, optional)
  • Salt and pepper to taste
  • 1/2 cup panko breadcrumbs (ensure they are vegan)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Vegetables:
    • Bring a large pot of salted water to a boil.
    • Add the broccoli and cauliflower florets and blanch for 3-4 minutes until just tender but still bright in color.
    • Drain and rinse with cold water to stop the cooking process. Set aside.
  3. Make the Cashew Cream Sauce:
    • Drain the soaked cashews and add them to a high-speed blender.
