Turkish Flatbread

Ingredients

For the Bread:

  • 4 cups of regular flour (16 points)
  • 1 1/2 cups of warm water (0 points)
  • 2 1/4 teaspoons of active dry yeast (0 points)
  • 1 teaspoon of sugar (0 points)
  • 2 teaspoons of salt (0 points)
  • 2 tablespoons of olive oil (8 points)

For the Topping:

  • 1 egg yolk (2 points)
  • 2 tablespoons of non-fat Greek yogurt (0 points)
  • 2 tablespoons of olive oil (8 points)
  • Sesame seeds (optional, minimal impact on points)
  • Black seeds (optional, minimal impact on points)

Directions

  1. Prepare the Dough:
    • In a small bowl, dissolve the sugar in lukewarm water. Sprinkle the yeast over the water and let it sit for about 10 minutes until it becomes bubbly.
    • In a large bowl, combine the flour and salt. Create a well in the center and add the yeast mixture and olive oil.
    • Mix until a dough forms. Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.
  2. Shape the Pide:
    • Preheat your oven to 450°F (230°C). If you have a pizza stone, place it in the oven to preheat.
    • Punch down the risen dough and divide it into two equal portions. Shape each portion into a ball.
    • On a floured surface, flatten each ball into a round or oval shape, about ½ inch thick.
  3. Prepare the Topping:
    • In a small bowl, whisk together the egg yolk, Greek yogurt, and olive oil.
  4. Assemble the Pide:
    • Place the shaped dough on a piece of parchment paper or a baking sheet lined with parchment paper.
    • Brush the top of each dough with the egg mixture. Use your fingers or a spoon to create a crisscross pattern on the surface of the dough.
    • Sprinkle sesame seeds and nigella seeds on top if desired.
  5. Bake:
    • Transfer the parchment paper with the dough onto the hot pizza stone or place the baking sheet in the oven.
    • Bake for about 15-20 minutes, or until the pide is golden brown and cooked through.
  6. Serve:
    • Allow the pide to cool slightly before slicing and serving. Enjoy warm with dips, cheeses, or as a side to your favorite meal.
