Instructions:

  2. In a food processor, combine the soaked chickpeas, mashed sweet potato, diced jalapeno, minced garlic, chopped cilantro, chopped green onions, ground cumin, baking soda, salt, and pepper. Pulse until well combined and the mixture forms a coarse paste.
  3. Form the falafel mixture into small patties, about the size of your slider buns.
  4. Place the falafel patties on a baking sheet lined with parchment paper.
  5. Bake the falafel in the preheated oven for about 17 minutes, flipping them halfway through, until they are golden brown and crispy on both sides.
  6. While the falafel is baking, prepare your slider buns or rolls by slicing them in half.
  7. Once the falafel is done, assemble your sliders by placing a falafel patty on the bottom half of each bun or roll.
  8. Top each patty with sliced cucumber, roma tomato, and mixed greens.
  9. Place the top half of the bun or roll on top and secure with a toothpick if necessary.
  10. Serve immediately and enjoy your sweet potato falafel sliders!
