Spinach and Feta Chicken Rolls
A delightful combination of tender chicken filled with a savory spinach, feta, and sun-dried tomato mixture. Perfect for a flavorful and healthy dinner!

Ingredients:
For the Chicken Rolls:
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
5 ounces fresh spinach, chopped
1/2 cup crumbled feta cheese
1/4 cup sun-dried tomatoes, chopped
Salt and pepper to taste
Toothpicks for securing
Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Prepare the Filling:
In a skillet, heat the olive oil over medium heat.
Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 5 minutes.
Add the chopped spinach to the skillet and cook until wilted, stirring occasionally. This should take about 2-3 minutes.
Remove the skillet from heat and allow the mixture to cool slightly.
In a bowl, combine the cooked spinach mixture with the crumbled feta cheese and chopped sun-dried tomatoes. Season with salt and pepper to taste.
Prepare the Chicken:
Carefully butterfly each chicken breast by slicing it horizontally, being careful not to cut all the way through.
Place the butterflied chicken between two sheets of plastic wrap or parchment paper and gently pound it to an even thickness using a meat mallet or rolling pin.


Stuff and Roll the Chicken:
Spoon a portion of the spinach and feta mixture onto each chicken breast.
Roll each chicken breast tightly around the filling and secure the edges with toothpicks.
Bake the Chicken Rolls:
Place the stuffed chicken breasts seam-side down in a baking dish.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
Serve:
Remove the toothpicks before serving.
Garnish with fresh herbs and additional chopped sun-dried tomatoes if desired.
