Spicy Pumpkin Rigatoni with Turkey Sausage

Ingredients:

  • 8 oz rigatoni pasta
  • 8 oz ground turkey sausage (lean)
  • 1 cup canned pumpkin puree (unsweetened)
  • 1/2 cup chicken broth (low-sodium)
  • 1/2 cup unsweetened almond milk (or any low-calorie milk)
  • 2 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes (adjust to taste)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 2 cups fresh spinach (you used this as a substitute for kale)
  • 1/4 cup grated Parmesan cheese (optional for topping)

Instructions:

  1. Cook the pasta: In a large pot, cook the rigatoni according to the package instructions until al dente. Drain and set aside.
  2. Cook the turkey sausage: Heat olive oil in a large skillet over medium heat. Add the ground turkey sausage and cook until browned, breaking it up with a spoon. This should take about 5–7 minutes.
  3. Add garlic and spices: Stir in the minced garlic, crushed red pepper flakes, cinnamon, and nutmeg. Cook for 1-2 minutes until the garlic is fragrant.
  4. Add the pumpkin: Stir in the pumpkin puree, chicken broth, and almond milk. Bring the mixture to a simmer, letting it thicken slightly, about 3–4 minutes.
  5. Combine and add greens: Add the fresh spinach and cook until wilted, stirring occasionally.
  6. Combine with pasta: Add the cooked rigatoni to the skillet, tossing everything together until well coated. Let the pasta absorb the sauce for a couple of minutes.
  7. Serve: Serve hot, garnished with grated Parmesan cheese if desired. Adjust seasoning with salt and pepper to taste.

Tips:

  • Pumpkin substitution: You can use butternut squash puree for a similar flavor.
  • Spice adjustment: If you prefer less spice, reduce the red pepper flakes or omit them altogether.
