Considered buying SlimFast Keto shakes, but didn’t feel good about the ingredients. Explored a bit online, found a recipe, then tweaked for my preference.
I made sure it was vegan, so my daughter could enjoy as well. A person could use heavy whipping cream rather than coconut milk if they prefer.
Makes 2 large shakes (as shown in pic), with each having roughly 9 net carbs and 525 calories. I’ll use this as a meal replacement, not a snack.
One shake fully satisfied my sweet chocolate craving and the ingredients were wholesome. No guilt here. The other is in the freezer. Curious how it’ll freeze (hoping for an icecream substitute). If it doesn’t freeze well, I’ll cut the recipe in half.

INGREDIENTS:
1 13.5 ounce can full-fat coconut milk
2 medium avocados
7 Tbsp cocoa powder
2 tsp vanilla extract
3 pinches of pink Himalayan salt
1/2 Cup Monk Fruit or Erythritol sweetener (“Swerve” brand at Walmart is good.)
1 Cup ice
INSTRUCTIONS:
Add coconut milk, avocado, cocoa powder, vanilla extract, salt, and sweetener to a blender. Blend until creamy smooth. Add in ice and blend until thick and creamy. Texture is very similar to mousse.
