🛒 Ingredients
Meat Filling
- 1 lb lean ground turkey (or extra lean beef 93%)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup mushrooms, chopped
- 1 cup zucchini, diced
- ½ cup carrots, finely chopped (optional, slightly higher carbs)
- 1 tbsp tomato paste
- 1 cup beef or chicken broth (low sodium)
- 1 tsp Worcestershire sauce
- 1 tsp thyme
- ½ tsp rosemary
- Salt & pepper to taste
Cauliflower Mash Topping
- 1 large head cauliflower, steamed
- 2 tbsp fat-free Greek yogurt
- 1 tbsp light butter (or skip for lower points)
- ¼ cup reduced-fat cheese (optional)

👩🍳 Instructions
- Cook the filling
- In a pan, cook ground turkey/beef until browned.
- Add onion, garlic, mushrooms, zucchini, and carrots. Cook 5–7 minutes.
- Add flavor
- Stir in tomato paste, broth, Worcestershire, and herbs.
- Simmer 10 minutes until slightly thickened.
- Make cauliflower mash
- Blend steamed cauliflower with Greek yogurt, butter, salt, and pepper until smooth.
- Assemble
- Spread meat mixture in a baking dish.
- Top with cauliflower mash.
- Sprinkle cheese (optional).
- Bake
- Bake at 375°F (190°C) for 20–25 minutes until golden.
