🛒 Ingredients

Meat Filling

  • 1 lb lean ground turkey (or extra lean beef 93%)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, chopped
  • 1 cup zucchini, diced
  • ½ cup carrots, finely chopped (optional, slightly higher carbs)
  • 1 tbsp tomato paste
  • 1 cup beef or chicken broth (low sodium)
  • 1 tsp Worcestershire sauce
  • 1 tsp thyme
  • ½ tsp rosemary
  • Salt & pepper to taste

Cauliflower Mash Topping

  • 1 large head cauliflower, steamed
  • 2 tbsp fat-free Greek yogurt
  • 1 tbsp light butter (or skip for lower points)
  • ¼ cup reduced-fat cheese (optional)
  • Salt & pepper

👩‍🍳 Instructions

  1. Cook the filling
    • In a pan, cook ground turkey/beef until browned.
    • Add onion, garlic, mushrooms, zucchini, and carrots. Cook 5–7 minutes.
  2. Add flavor
    • Stir in tomato paste, broth, Worcestershire, and herbs.
    • Simmer 10 minutes until slightly thickened.
  3. Make cauliflower mash
    • Blend steamed cauliflower with Greek yogurt, butter, salt, and pepper until smooth.
  4. Assemble
    • Spread meat mixture in a baking dish.
    • Top with cauliflower mash.
    • Sprinkle cheese (optional).
  5. Bake
    • Bake at 375°F (190°C) for 20–25 minutes until golden.
