Ingredients:

2 cups grated zucchini
1 cup all-purpose flour
1 tablespoon ground flaxseed
1 tablespoon nutritional yeast
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1 cup unsweetened almond milk
2 tablespoons olive oil
1 tablespoon apple cider vinegar
Instructions:

Prepare Zucchini: Grate the zucchini using a grater. Place the grated zucchini in a clean kitchen towel or cheesecloth, and squeeze out excess moisture. Set aside.
Preheat Waffle Iron: Preheat your waffle iron according to the manufacturer’s instructions.
Prepare Batter: In a large mixing bowl, combine the all-purpose flour, ground flaxseed, nutritional yeast, baking powder, baking soda, salt, black pepper, and garlic powder. Mix well.
Mix Wet Ingredients: In another bowl, whisk together the almond milk, olive oil, and apple cider vinegar until well combined.
Combine Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the grated zucchini until evenly distributed throughout the batter.
Cook Waffles: Once the waffle iron is preheated, lightly grease the plates with oil or cooking spray. Pour enough batter onto the center of the waffle iron to cover about two-thirds of the surface area. Close the lid and cook according to the manufacturer’s instructions, until the waffles are golden brown and crispy.
Serve: Carefully remove the cooked waffles from the waffle iron and serve immediately with your favorite toppings such as avocado slices, salsa, vegan sour cream, or fresh herbs.
