WW Reuben Bake Recipe
Ingredients:
1 lb lean corned beef, thinly sliced
1 cup sauerkraut, drained and squeezed dry
1 cup reduced-fat Swiss cheese, shredded
1/2 cup light Thousand Island dressing
6 slices light rye bread, toasted and cubed
4 large eggs
1 cup skim milk
1/2 tsp salt
1/4 tsp black pepper
Cooking spray
Instructions:
Preheat your oven to 350°F (175°C). Lightly coat a 9×13-inch baking dish with cooking spray.
In a large bowl, combine the toasted rye bread cubes and Thousand Island dressing. Toss gently to coat the bread evenly.
Spread half of the coated bread cubes evenly in the bottom of the prepared baking dish.
Layer half of the corned beef slices over the bread cubes, followed by half of the sauerkraut and half of the Swiss cheese.
Repeat the layers with the remaining bread cubes, corned beef, sauerkraut, and Swiss cheese.
In another bowl, whisk together the eggs, skim milk, salt, and black pepper until well combined.
Pour the egg mixture evenly over the layers in the baking dish, ensuring all ingredients are coated.
Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
After 30 minutes, remove the foil and bake for an additional 15-20 minutes or until the top is golden brown and the center is set.
Remove from the oven and let it cool for 5 minutes before serving.
