Refreshing Cucumber Salad
This salad is the most refreshing salad one could have on a summer’s day. It is light, it is refreshing and it is meant to be eaten cold. This is the perfect salad to serve when you grill burgers, chicken or even pork chops.
Although there are many versions of this salad and different dressings, the one I have included here is my favorite. Even though this is considered a quick to make salad, this recipe does not lack flavor. This German version is also a healthy version.
The cucumbers are a hydrating vegetable, and there is no sour cream or mayonnaise in the recipe. As a popular side dish, it made its way to the United States and became extremely popular.

Refreshing Cucumber Salad

Ingredients

2 English cucumbers, sliced thin 1 tsp salt
red onion, sliced thin 1 cup white vinegar
½ cup water
½ cup granulated sugar
tbsp dill, fresh and chopped fine
Instructions
FIRST STEP:
Place the sliced cucumbers into a bowl

Add salt and toss lightly

SECOND STEP:

Leat sweat for 30 minutes

Drain liquid and add in the sliced red onion

THIRD STEP:
In a pot over high heat, combine the sugar, water and the Stirring constantly, until the sugar is dissolved.

Cool the dressing

FOURTH STEP:
Pour over the cucumbers and onions when it is cooled

Sprinkle the fresh chopped dill in and toss to combine

FIFTH STEP:
Cover and refrigerate to combine all the flavors, about one hour

Serve cold and enjoy!

Notes
Serve as a side dish with grilled meat or meatloaf and potatoes. This makes a refreshing salad to eat alone also. The creamy version of this salad would have the dressing made with sour cream or mayonnaise.
